Crock"pot" Roast.


Here is my recipe for my slow cooker pot roast. 
I originally found this recipe on Food.com and the reviews were all great, I made mine a little different, since the recipe listed is only for the roast, I added veggies. 

Ingredients:
Chuck roast-(size depending on size of crockpot)
1 Packet of brown gravy mix
1 Packet of dry Ranch dressing mix
1 Packet of Italian seasoning mix
Potatoes(I used 4 large rustic potatoes)
Carrots-More or less depending on what you like
Celery-More or less depending on what you like
Onion-I used half of a large yellow onion
Water

I mixed all the seasonings together and rubbed them all over my roast, then mixed in the rest. I put a layer of potatoes( cut into smaller pieces) on the bottom, then roast on top then layered the rest of my veggies around and on top of roast. I cut my onion into thirds, so they were easy to fish out..since the bf hates onions I didn't use chunks like i usually would. I added maybe 2 cups of water, but a 1/2-1cup would be fine, I always make the mistake of using too much water! If you are hoping for a thicker gravy then use less water. I like to eat mine as a stew :)

Cooking:
Cooked on high for 4hrs
Cooked on low for 3 hrs
Could be more or less depending on how your crockpot cooks.

I know, I know, I get this burst of inspiration and go off on a blog post.. and then silence. I hate it. I hate it mostly because that is how my life works. One day I'm organizing, and being productive and trying to finish up my projects, and the next I'm stuck watching all 3 seasons of Vampire
diaries(and no that is not an example, it really happened). 
My last post consisted of my long list of goals and getting in shape.. I will be painfully honest in saying that none of them happened. Ok, well not as much as I wanted them too. First off.. I've came to the conclusion that gym memberships are NOT for me. I'm either to tired when I get home to change into comfortable clothes, get back into my hot (no a/c) car and drive 15 minutes to a gym, or I get anxiety about going because I loathe the atmosphere. So I've decided to cancel my membership and use my city's rec center. Plus.. I busted out the jogging stroller and Harper wanted to be in it immediately. I also came across some great workout videos on netflix. I started playing racquetball with my sister.. hello cardio! That game whooped my booty.. even tho we didn't play it correctly and laughed.. a lot, We were sweating like whores afterwards. 
Onto recent happenings... I finally started school! I just finished up my 3 week orientation, and will start my first set of classes Monday. I will be getting my associates in fundamentals of business, and then will hopefully go on to get my bachelors ins business management/entrepreneurship. Im really excited! Im doing online classes, so that way I can have more flexibility when it comes to Harper and my jobs. I really hope to learn a lot from this, and hope that it will push me in the right direction of owning my own business someday, I have so many ideas. But I'm just excited to have a degree and have the knowledge, and hope that I can show Harper that furthering your education and hard work really pays off. Lets just hope she doesn't decide this at my age. haha

Hopefully I can get some of my projects finished and pictures taken so I can update! So many craft things I start and dont finish, or have ideas for and dont start.

Harper's first haircut.

Still updating.. Harper got her first haircut a few days before her 2nd Bday. We are lucky enough to have my mom to do our hair! Here are a few pictures. She thought it was so fun, and kept saying "pretty girl" and then afterwards wanted me to sit in the chair so she could comb my hair.

Updated! Harpers Yo Gabba Gabba party..

I get so wrapped up in her parties that I never take as many pictures as I want too.. here are all the ones I got. Harper's party was a success and everything turned out really well! 



 Her chair is on top of her mini dance stage my dad help me build. We had the ipod set up next to it so she could dance to all her yo gabba gabba songs!

Everything this year I made.. besides the cake.  Above you can see my tissue pom-poms.
Also not pictured is chocolate covered pretzel sticks, and my razzleberry lemonade! (they drink it on yo gabba gabba haha)

 I drank 20 of these within a few weeks.. I have yet to have another. They look just like old milk bottles.. but looked really cute with lemonade and paper straws.. I saved them and still drink out of them! 
 Last minute creation.. I bought the wrong kind of chocolate so I couldnt get them covered.. so I dipped the ends in a tiny bit of water and covered them with sprinkles! 
 Koolaid popcorn! Soo yummy and made great goodie bags for the guests.. i made lemon lime and strawberry. Found the idea on pinterest of course. 
Rainbow cupcakes.. this was so fun! They turned out really cute. Idea from pinterest as well.

Mothers day..


As usual, Michael made me feel special, and waking up to my goofy mini-me is always the best gift I could get, especially because that is what Mother's day is all about. We started the day off right with going out to cracker barrel for breakfast with my mom, Grandma, and my siblings. Then my mom took me and my Grandma out to pick out flowers for our yards. :) We exchanged cards and gifts and then I came home to flowers and cards from my cute lil family. Michael picked out a card from Harper and wrote what he thought she would say.. so cute! He got me a card, roses, and some veggies to plant in my garden!

Bleh...


As I sit here stuffing my face with panda express.. I find this to be the perfect time to set some serious goals.. all which im sure have been set before. If you Religiously stalk read my blog then you know that I have posted and talked about losing weight and getting in shape.. now in my defense the first time i Talked about it, I became pregnant shortly after.. and what the heck, I might as well live it up and have an excuse to get really fat and cry over twinkies right? Well It actually was the other way around, I got very sick and lost almost 20 lbs.. still cried.. but not over twinkies.

Goal #1

Stop caring about what other people think and get my booty to the gym!! Plus I have awesome friends, that if i beg enough i can get to come with me right??

I always have a set number of lb's I want to lose or a set weight im looking to reach, but If i gain muscle and lose inches this number is really not going to be the same. I always just want to see the big picture right away, and i think thats what gets me discouraged. Plus I need to get healthier all around, so if I lose weight in the process great!

Goal #2

Set a realistic weight goal, and time frame.. take it step by step and not trying to see the whole picture ahead of time. Focus on my health and losing weight as a bonus!

Goal #3

Eat healthier. Make healthier meals at home, this not only benefits me but it benefits my family. Cook more in general. Find healthier snack alternatives and drink more water!!

I need to use my resources as well, I have a 2 year old that loves to explore and a jogging stroller so If i in no way shape or form can make it to the gym my booty better be outside with the little one, walking, jogging, or chasing her around at the park. I no longer can get by with saying I just had a kid.. that only works for like the first 6 months.. if that. I need some motivation, I need to do something asap! So im going to use my blog as a diary, and a way to keep up with what im doing and my progress.

In the meantime.. im going to keep reading THIS blog for motivation. Love all her posts.

Easter.



Harper's first Easter egg hunt! She had so much fun running and picking up eggs to put in her basket.. it was funny to watch her spill some, and then turn around and find them again with excitement!
Harper got to have a sleepover and Grandmas house, while we were in Wendover.. Grandma woke her up with a HUGE stuffed bunny and a new Easter dress! We then came home to wake her up from her nap with her Easter basket and had Lunch with the fam, then everyone got to enjoy the Easter egg hunt.. 250 eggs to hunt for! Great Easter weekend with Family & Friends.

♥ Happy Birthday!



Harper Monroe is now 2! Where does the time go? I cannot believe I officially have a 2 yr old. Insane!
This year for Harper's bday we had a party the weekend after her "official" birthday, so on her actual birthday We woke up early and went to Grandmas house for breakfa
st, then we went to see the Lorax.. Harper did a lot better that I thought she would, she of course tested her boundaries and then didnt want to sit in her seat for longer than 10 seconds at a time! It was still cute to see her intensely watch, and sit in her booster seat with her own popcorn.


Im having a love/hate emotion with the "toddler" stage.. Harper is soo independent, and is such a little drama queen! haha she definitely keeps us on our toes! She is talking so much, and learning so many things... I have to stop and realize how much she actually picks up from us on a daily basis.. she really is a sponge, soaking up everything around her.. its amazing and so fun watching her grow into a tiny person!

Sunday drive..

We obviously didn't expect the weather to be like it was, and parts of the canyon were closed. But I had made us lunch before we left, so we got to park and eat and look at the pretty scenery. Harper enjoyed the drive so much she slept the whole time! We of course had to stop at the Daley Freeze to get something sweet for the ride home.. love that place. We had lunch there when Harper was just 5 days old.

Traumatizing Milestone.

Harper's First trip to the dentist was partially how i expected it to go. Just a little friendly advice.. advice I should have taken myself.. don't rush and take your child to a dentist appointment when she hasn't napped or had lunch yet!!! grrr. Not the funnest milestone to record.. especially when you have to use super power strength to get her into the car seat after because she thought she could take all the toys from the "pick a toy" bin and continued to try and run back inside the dentist office... which then led me to Target where I spoiled her for putting her through this. haha

But on a happier note.. her teeth are perfect! No cavities, and all are growing in like they should!

Happenings.

Grizzlies game with the boys..
Harper was quite obsessed with the mascot.. Once she saw him, it was over. Crying, getting up walking around saying "bur" "where go?" it was cute and exhausting. Also.. notice her piggy's.. so glad she is finally growing some hair.


I'm slightly obsessed with taking pictures of me and my child. No big deal.

From left to right:
Lakers Game- we cheer on our favorite team and yes she says "Kobe" we have no shame.
Coloring- her new obsession, although she likes you to color with specific crayons she picks out for you and only for a certain amount of time before switching to the next one.
Binky face- Sometimes she finds old Binky's and thinks she is hilarious.. it looks abnormal considering she stopped using a binky at 8 months!
Scary web cam face- we have too much fun.
Relaxin- in her princess fold out couch and Pa's house.. she loves that thing!
Painted toes- she takes her socks of in the car from time to time so she can look at them and say "pweety toes" haha
Rocking chair- Cracker Barrel for breakfast, she loved the chairs they had outside... of course I had to be the obnoxious mom that sees a cute photo prop op(great choice of words eh?) and had to snap a few too many pictures.
Boots with the fur- and yes she insists on wearing her boots while only wearing a diaper, and she is standing on the fire place ledge where she gets her groove on.. the ipod dock is plugged in there and she knows how to use it. Shes got skillls.
And of course the best for last.. duck face with mom.. proud moment when she could accomplish that one. Issues? No.

Thought this was such a cute idea.. Ive been wanting to do som
e sort of banner to go across my fireplace mantel.. and ive been itching to do some sort of craft.. luckily I had everything around my house!

Seriously took me 15 min to assemble. and I think it looks great!



Harper was a big help as you can see.. she really loves to try and figure out what Im doing.. she sat next to me, handing me the cupcake liners and tried helping me attach them. :)
